Savory Southern Cornbread Stuffing

Ingredients

  • 1 package dry cornbread mix (16-ounce)
  • ¼ cup butter
  • 3 ribs celery (chopped)
  • 1 medium onion (chopped)
  • 2 large eggs (beaten)
  • 2 cups chicken stock (divided)
  • ½ teaspoon dried sage
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 baking dish.
  2. Melt butter in a skillet over medium heat, then sauté the onion and celery until soft.
  3. In a large bowl, combine the sautéed vegetables, crumbled cornbread, eggs, 1 cup of chicken stock, sage, thyme, salt, and pepper. Mix well, adding more chicken stock as needed.
  4. Transfer the mixture to the prepared baking dish and spread it evenly.
  5. Bake for 30 to 35 minutes or until the top is browned. Remove from the oven and serve warm.
