Easy Yellow Fish Curry

Ingredients

Curry Paste

  • 3–6 pieces Thai dried chili peppers
  • 4 cloves garlic
  • 1 whole shallot
  • 1 tbsp minced ginger
  • 1 tbsp lemongrass paste
  • 3 tsp ground turmeric
  • 3 tsp ground curry
  • 3 tsp ground cumin
  • 2 tsp black pepper
  • 1 tsp ground coriander
  • ½ tsp garlic powder
  • tsp Himalayan pink salt
  • ¼ tsp ground cinnamon
  • 2 tbsp olive oil

Main Ingredients

  • 1 lb. cod loin fish filet
  • ½ cup green bell pepper
  • ¼ cup red bell pepper
  • 15 oz. coconut milk
  • 2 tbsp butter
  • 1 tsp sugar
  • cooked rice optional

Instructions

  1. Blend the curry paste ingredients in a food processor while slowly adding olive oil until it forms a paste.
  2. Season the cod with ground cumin, black pepper, and salt.
  3. In a sauté pan, heat butter and cook the bell peppers for 5 minutes until tender.
  4. Add the yellow curry paste to the pan and cook for 1-2 minutes before adding coconut milk.
  5. Stir in the fish, lower the heat, cover, and cook for 10-12 minutes, stirring occasionally. Add sugar and salt.
  6. Serve the curry over rice.
