Instructions
- Blend the curry paste ingredients in a food processor while slowly adding olive oil until it forms a paste.
- Season the cod with ground cumin, black pepper, and salt.
- In a sauté pan, heat butter and cook the bell peppers for 5 minutes until tender.
- Add the yellow curry paste to the pan and cook for 1-2 minutes before adding coconut milk.
- Stir in the fish, lower the heat, cover, and cook for 10-12 minutes, stirring occasionally. Add sugar and salt.
- Serve the curry over rice.
