Stuffed Crab (Poo Cha)

The crab shells

The coating

eggs, slightly beaten
Instructions
- Mix all filling ingredients in a bowl until sticky.
- Stuff the filling into crab shells and smooth the surface.
- Steam the stuffed crab for 5 minutes and discard any water.
- Cool the stuffed crab to room temperature.
- Heat oil in a wok and dip each crab shell in beaten eggs.
- Fry the stuffed crabs until the surface is light to golden brown.
- Remove from the wok and serve immediately.
