Stuffed Crab (Poo Cha)

Ingredients

The crab shells

  • 6-8 pieces blue crab shells

The filling

  • 8 oz ground pork
  • 4 oz crab meat
  • 2 oz peeled shrimp, minced
  • 1 piece egg
  • 3 pieces shallots, minced
  • 6 pieces coriander leaves, finely chopped
  • 1 tablespoon fish sauce
  • 3 dashes ground black pepper

The coating

  • 2 pieces eggs, slightly beaten

Instructions

  1. Mix all filling ingredients in a bowl until sticky.
  2. Stuff the filling into crab shells and smooth the surface.
  3. Steam the stuffed crab for 5 minutes and discard any water.
  4. Cool the stuffed crab to room temperature.
  5. Heat oil in a wok and dip each crab shell in beaten eggs.
  6. Fry the stuffed crabs until the surface is light to golden brown.
  7. Remove from the wok and serve immediately.
