Instructions
- Preheat the oven to 350°F and line two large baking sheets with parchment paper.
- In a mixing bowl, cream together the softened butter and brown sugar until well combined.
- Add the egg, pumpkin puree, and vanilla extract, mixing until combined.
- Sprinkle the pumpkin pie spice, baking powder, baking soda, and salt over the mixture and mix to combine.
- Add the flour and mix on low speed until just combined, ensuring not to overmix.
- Use a cookie scoop to portion the dough onto the prepared baking sheets, leaving space between each scoop.
- Bake one sheet at a time for 12 to 15 minutes until the tops are set and edges are lightly browned.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- If desired, frost the cookies with cream cheese frosting once they are completely cool.
