Asparagus Ravioli with Pan-Seared Cremini Mushrooms

Ingredients

The ravioli

  • 12-16 pieces asparagus ravioli cooked

The mushrooms

  • 1 tbsp olive oil
  • 8 oz cremini mushrooms trimmed and halved
  • 2 tbsp red wine
  • 1 tbsp butter
  • to taste salt
  • to taste pepper
  • to serve Parmesan cheese + chopped parsley

Instructions

  1. Heat oil in a skillet over high heat.
  2. Add mushrooms and cook for 6-7 minutes until deep brown.
  3. Pour in red wine and cook until evaporated, about 2-3 minutes.
  4. Add butter and let it melt.
  5. Remove from heat and season with salt and pepper.
  6. Pour the mushroom mixture over the cooked ravioli.
  7. Sprinkle with Parmesan cheese and parsley before serving.
