Spicy Shrimp and Bok Choy Soup

Instructions
- Heat a medium soup pot over medium-high heat and add vegetable oil, crushed red pepper flakes, garlic, ginger, mushrooms, and bok choy, seasoning with salt and pepper.
- Add chicken broth and seafood stock or clam juice, cover, and bring to a boil.
- Add shrimp and noodles, cooking for 3 minutes.
- Stir in scallions and cook for an additional 2 minutes, then turn off the heat and let sit for 2 to 3 minutes.
- Adjust salt to taste and serve.
