Spicy Shrimp and Bok Choy Soup

Ingredients

  • 3 tablespoons vegetable oil
  • 2 teaspoons crushed red pepper flakes
  • 4 cloves garlic, chopped
  • 2 inches ginger root, peeled and cut into matchsticks
  • ½ pound shiitake mushroom caps, sliced
  • 1 medium bok choy, trimmed and cut
  • 1 quart chicken broth
  • 1 cup seafood stock or clam juice
  • pounds medium shrimp, peeled and deveined
  • ½ pound vermicelli
  • 4 scallions cut into pieces

Instructions

  1. Heat a medium soup pot over medium-high heat and add vegetable oil, crushed red pepper flakes, garlic, ginger, mushrooms, and bok choy, seasoning with salt and pepper.
  2. Add chicken broth and seafood stock or clam juice, cover, and bring to a boil.
  3. Add shrimp and noodles, cooking for 3 minutes.
  4. Stir in scallions and cook for an additional 2 minutes, then turn off the heat and let sit for 2 to 3 minutes.
  5. Adjust salt to taste and serve.
