Ingredients

Streusel Topping

Cheesecake Filling

  • 1 ¾ cups flour
  • 2 ½ teaspoons baking powder
  • ¾ teaspoon table salt
  • ½ cup sugar
  • 2 teaspoons orange zest
  • 1 large egg
  • ¾ cup buttermilk
  • cup canola oil
  • 1 teaspoon vanilla
  • 1 cup fresh or frozen berries

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with cupcake liners.
  2. Prepare the streusel by combining sugar, flour, and graham cracker crumbs, then cutting in the butter and refrigerating the mixture.
  3. Make the cheesecake filling by beating together the cream cheese, sugar, orange zest, and egg yolk until smooth.
  4. In a bowl, mix the dry ingredients for the muffins: flour, baking powder, salt, sugar, and orange zest.
  5. In another bowl, combine the wet ingredients: egg, buttermilk, oil, and vanilla, then mix with the dry ingredients until just combined.
  6. Toss the berries with a little flour and sugar, then gently fold into the muffin batter.
  7. Fill the muffin cups with batter and squeeze in about 2 teaspoons of cheesecake filling.
  8. Top each muffin with the streusel mixture and bake for 15-20 minutes until a toothpick comes out with loose crumbs.
  9. Let the muffins cool for 5 minutes in the tin before transferring them to a cooling rack.
