Instructions
- Preheat the oven to 350°F and line a muffin tin with cupcake liners.
- Prepare the streusel by combining sugar, flour, and graham cracker crumbs, then cutting in the butter and refrigerating the mixture.
- Make the cheesecake filling by beating together the cream cheese, sugar, orange zest, and egg yolk until smooth.
- In a bowl, mix the dry ingredients for the muffins: flour, baking powder, salt, sugar, and orange zest.
- In another bowl, combine the wet ingredients: egg, buttermilk, oil, and vanilla, then mix with the dry ingredients until just combined.
- Toss the berries with a little flour and sugar, then gently fold into the muffin batter.
- Fill the muffin cups with batter and squeeze in about 2 teaspoons of cheesecake filling.
- Top each muffin with the streusel mixture and bake for 15-20 minutes until a toothpick comes out with loose crumbs.
- Let the muffins cool for 5 minutes in the tin before transferring them to a cooling rack.
