One-Bowl Buttermilk Birthday Cake

Instructions
- Preheat the oven to 350ºF.
- Whisk together the flour, salt, baking soda, baking powder, and sugar.
- Add the oil, eggs, buttermilk, and vanilla, and stir to combine.
- Coat two 6-inch cake pans (or one 9-inch pan) with nonstick spray or butter.
- Pour half of the batter into each pan and bake for 25 to 30 minutes until a toothpick comes out clean.
- Cool in the pan for 15 minutes before inverting onto a cooling rack to cool completely.
- To make the frosting, beat cream cheese and sugar until light and fluffy.
- Add the heavy cream, a pinch of salt, and vanilla, and beat until fluffy.
- Cut each cake in half crosswise and layer with frosting in between.
- Frost the outside of the cake and add sprinkles on top.
