One-Bowl Buttermilk Birthday Cake

Ingredients

The cake

  • 1 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • ½ cup neutral oil
  • 1 cup sugar
  • 2 units eggs, lightly beaten
  • ½ + 2 tablespoons buttermilk
  • 2 teaspoons vanilla extract

The frosting

  • 8 oz cream cheese
  • ½ cup sugar
  • cup heavy cream
  • pinch units sea salt
  • 1 teaspoon vanilla

For presenting

  • to taste units sprinkles
  • as needed units candles

Instructions

  1. Preheat the oven to 350ºF.
  2. Whisk together the flour, salt, baking soda, baking powder, and sugar.
  3. Add the oil, eggs, buttermilk, and vanilla, and stir to combine.
  4. Coat two 6-inch cake pans (or one 9-inch pan) with nonstick spray or butter.
  5. Pour half of the batter into each pan and bake for 25 to 30 minutes until a toothpick comes out clean.
  6. Cool in the pan for 15 minutes before inverting onto a cooling rack to cool completely.
  7. To make the frosting, beat cream cheese and sugar until light and fluffy.
  8. Add the heavy cream, a pinch of salt, and vanilla, and beat until fluffy.
  9. Cut each cake in half crosswise and layer with frosting in between.
  10. Frost the outside of the cake and add sprinkles on top.
