Simple Asparagus Soup

Instructions
- Sauté the onion in butter or oil until translucent.
- Add the potatoes and cook until tender, about 10 minutes.
- Stir in the curry paste and cook for another minute.
- Add the coconut milk, salt, and water, then bring to a simmer.
- Add the asparagus and cook until tender, about 2-3 minutes.
- Puree the soup until smooth.
- Adjust the consistency with more water if needed and taste for salt.
- Serve topped with your choice of garnishes.
