Authentic & Easy Miso Soup

Miso Soup

white miso paste

green onion (trimmed and thinly sliced)
Instructions
- Soak the kombu in cold water for at least 30 minutes.
- Heat the water with kombu over low heat until it simmers, then remove the kombu.
- Add bonito flakes to the warm water and let them sink for 5-6 minutes.
- Strain the bonito flakes to capture the dashi stock.
- Reheat the dashi stock and mix some with the miso paste in a small bowl.
- Add the miso mixture back to the stock along with tofu and green onions.
- Cook gently over low heat for a few minutes without boiling, then serve.
