Ingredients

Dashi (Soup Stock)

  • 4 cups cold water
  • ¼ ounce kombu (kelp)
  • ½ ounce bonito flakes (fish)

Miso Soup

  • 3 tablespoons white miso paste
  • cup tofu (diced)
  • 1 green onion (trimmed and thinly sliced)

Instructions

  1. Soak the kombu in cold water for at least 30 minutes.
  2. Heat the water with kombu over low heat until it simmers, then remove the kombu.
  3. Add bonito flakes to the warm water and let them sink for 5-6 minutes.
  4. Strain the bonito flakes to capture the dashi stock.
  5. Reheat the dashi stock and mix some with the miso paste in a small bowl.
  6. Add the miso mixture back to the stock along with tofu and green onions.
  7. Cook gently over low heat for a few minutes without boiling, then serve.
