Ingredients

The noodles

  • 8 ounces thin noodles

The vegetables

  • ½ red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 pound shredded cabbage
  • 1 inch fresh ginger, minced
  • 1 clove garlic, minced
  • 2 green onions, chopped (for garnish)

The sauce

  • 1 tablespoon toasted sesame oil
  • 3 tablespoons tamari (gluten-free soy sauce)
  • 2 teaspoons curry powder
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup

The seasoning

  • ½ teaspoon fine sea salt
  • ½ teaspoon black pepper
  • 1 tablespoon extra-virgin olive oil

Instructions

  1. 1. Boil salted water and cook the noodles according to package directions, then drain.
  2. 2. In a skillet, heat olive oil and sauté red onion, bell pepper, and cabbage until softened, about 8 to 10 minutes. Add ginger and garlic and stir for 1 more minute.
  3. 3. Mix the sauce ingredients in a bowl and pour over the sautéed veggies. Add the cooked noodles and season with salt and pepper.
  4. 4. Toss everything together until well-coated and hot. Serve warm, garnished with green onions.
