Mushroom Soup

Instructions
- 1. Sauté the onion in olive oil in a large soup pot over medium-low heat for about 5 minutes until tender.
- 2. Add the diced carrots and cook, covered, for another 5 minutes.
- 3. Stir in the minced garlic and sliced mushrooms, cooking for another 10 minutes until the mushrooms release their juices.
- 4. Add the broth and salt, then simmer uncovered for 30 minutes until all vegetables are very tender.
- 5. Puree the soup using an immersion blender or food processor, then stir in the milk or cream before serving warm.
