Mushroom Soup

Ingredients

  • 3 tbs olive oil
  • 1 small onion, diced
  • 2 medium carrots, diced
  • 1 clove garlic, minced
  • 1 ½ pounds fresh mushrooms, sliced
  • 4 cups broth
  • ½ tsp salt
  • ½ cup whole milk or heavy cream

Instructions

  1. 1. Sauté the onion in olive oil in a large soup pot over medium-low heat for about 5 minutes until tender.
  2. 2. Add the diced carrots and cook, covered, for another 5 minutes.
  3. 3. Stir in the minced garlic and sliced mushrooms, cooking for another 10 minutes until the mushrooms release their juices.
  4. 4. Add the broth and salt, then simmer uncovered for 30 minutes until all vegetables are very tender.
  5. 5. Puree the soup using an immersion blender or food processor, then stir in the milk or cream before serving warm.
