Easy Veggie Paella

Ingredients

The base

  • 1 package yellow or Spanish rice mix (5.2 ounces)
  • 1 ½ cups water

The vegetables

  • ½ cup chopped onion
  • 2 cloves garlic (chopped)
  • 4 cups raw mixed veggies of choice
  • 1 can diced tomatoes (14.5 ounces)

The protein

  • 2 links veggie sausage

The spices and seasoning

  • 1 ½ teaspoons smoked paprika
  • ¼ teaspoon sea salt

Optional garnish

  • to taste parsley
  • to taste lemon

Instructions

  1. Sauté the onion and garlic in oil or broth until slightly soft.
  2. Add the diced tomatoes, mixed veggies, sausage or beans, and smoked paprika, and sauté for a few minutes.
  3. Stir in the rice mix and water, using less water than recommended to keep the rice drier.
  4. Bring to a boil, then reduce to a simmer and cook for 7 minutes.
  5. Serve garnished with lemon and parsley if desired.
