Easy Veggie Paella
Ingredients

yellow or Spanish rice mix (5.2 ounces)

raw mixed veggies of choice

diced tomatoes (14.5 ounces)

Instructions
- Sauté the onion and garlic in oil or broth until slightly soft.
- Add the diced tomatoes, mixed veggies, sausage or beans, and smoked paprika, and sauté for a few minutes.
- Stir in the rice mix and water, using less water than recommended to keep the rice drier.
- Bring to a boil, then reduce to a simmer and cook for 7 minutes.
- Serve garnished with lemon and parsley if desired.
