Ingredients

The dough

  • 1 ¼ cups almond flour
  • ¼ cup coconut flour
  • 1 tsp pure vanilla extract
  • 6 tbsp organic cane sugar
  • 6 tbsp butter, softened
  • 1 large egg
  • ½ tsp cinnamon
  • ¼ tsp fine sea salt
  • ¼ tsp baking soda
  • ¼ tsp cream of tartar

For rolling

  • 2 tbsp organic cane sugar
  • 1 ½ tsp cinnamon

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. Cream together the butter and sugar in a stand mixer until light and fluffy.
  3. Add the vanilla and egg, mixing until combined.
  4. Incorporate the almond flour, coconut flour, cinnamon, salt, baking soda, and cream of tartar, mixing until a fluffy dough forms.
  5. Combine the sugar and cinnamon for rolling in a small bowl.
  6. Scoop and roll the dough into balls, then roll each in the cinnamon sugar mixture.
  7. Place the balls on the cookie sheet, spacing them about 2 inches apart, and flatten each cookie with the bottom of a measuring cup.
  8. Bake for 12 minutes, then cool on a wire rack before enjoying.
