Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- Cream together the butter and sugar in a stand mixer until light and fluffy.
- Add the vanilla and egg, mixing until combined.
- Incorporate the almond flour, coconut flour, cinnamon, salt, baking soda, and cream of tartar, mixing until a fluffy dough forms.
- Combine the sugar and cinnamon for rolling in a small bowl.
- Scoop and roll the dough into balls, then roll each in the cinnamon sugar mixture.
- Place the balls on the cookie sheet, spacing them about 2 inches apart, and flatten each cookie with the bottom of a measuring cup.
- Bake for 12 minutes, then cool on a wire rack before enjoying.
