Bacon Ranch, Potato, Egg, and Spinach Breakfast Casserole

Homemade Ranch Seasoning

chives, dried or fresh

Instructions
- Preheat the oven to 375°F and spray a baking dish with cooking spray.
- Boil the diced potatoes for 5 minutes in boiling water, if desired for softness.
- In a skillet over medium-high heat, sauté the chopped veggies (excluding spinach) with half of the ranch seasoning until soft.
- Spread the sautéed veggies evenly in the bottom of the baking dish.
- Add a layer of spinach on top of the veggies.
- Whisk together the egg whites and eggs, seasoning with ranch seasoning, salt, and pepper, then pour over the veggies.
- Add crumbled bacon and shredded cheese as another layer.
- Bake for 30-35 minutes, until set and lightly browned.
- Allow to cool before serving.
