Bacon Ranch, Potato, Egg, and Spinach Breakfast Casserole

Ingredients

The main ingredients

  • 2 pieces eggs
  • 5 pieces red potatoes, diced
  • 1 ½ cups egg whites
  • 2-3 cups spinach, frozen, thawed and drained
  • 6 slices bacon, cooked and crumbled
  • 1 cup sliced mushrooms, chopped
  • ½ piece red onion, chopped
  • ½ piece green pepper, chopped
  • 1 ¼ cups shredded cheddar or 3 cheese mix
  • to taste salt and pepper
  • as needed cooking spray

Homemade Ranch Seasoning

  • 1 ½ teaspoons chives, dried or fresh
  • 1 ½ teaspoons dried dill
  • 1 ½ teaspoons onion powder
  • 1 ½ teaspoons garlic powder
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 375°F and spray a baking dish with cooking spray.
  2. Boil the diced potatoes for 5 minutes in boiling water, if desired for softness.
  3. In a skillet over medium-high heat, sauté the chopped veggies (excluding spinach) with half of the ranch seasoning until soft.
  4. Spread the sautéed veggies evenly in the bottom of the baking dish.
  5. Add a layer of spinach on top of the veggies.
  6. Whisk together the egg whites and eggs, seasoning with ranch seasoning, salt, and pepper, then pour over the veggies.
  7. Add crumbled bacon and shredded cheese as another layer.
  8. Bake for 30-35 minutes, until set and lightly browned.
  9. Allow to cool before serving.
