Lobster Bisque

Ingredients

The base

  • 3 Tbsp. butter
  • 1 cup chopped white or yellow onions
  • ½ cup chopped carrots
  • ½ cup chopped celery
  • 3 cloves garlic, minced
  • 3 Tbsp. tomato paste
  • 3 Tbsp. flour

The liquid

  • 2 cups seafood stock
  • 1 cup white wine
  • ¼ cup cognac or brandy (optional)

The main ingredients

  • 12 oz chopped lobster meat
  • 1 tsp. smoked paprika
  • 1 leaf bay leaf
  • 1 sprig fresh thyme (or ½ tsp. dried thyme)
  • ¼ tsp. cayenne
  • ½ cup heavy cream (or more)
  • to taste salt and freshly-ground black pepper

Instructions

  1. Melt the butter in a large stockpot over medium-high heat.
  2. Add onions, carrots, celery, garlic, and tomato paste; sauté for 5 minutes until onions are translucent.
  3. Sprinkle flour over the mixture and stir to coat the vegetables; sauté for an additional minute.
  4. Pour in seafood stock, white wine, cognac, lobster meat, smoked paprika, bay leaf, thyme, and cayenne; stir to combine.
  5. Cook for 30 minutes over medium-low heat, stirring occasionally.
  6. Remove bay leaf and thyme sprig, then stir in heavy cream and season with salt and pepper as needed.
  7. Puree the soup using an immersion blender or in batches in a traditional blender until smooth.
  8. Serve immediately.
