Instructions
- Melt the butter in a large stockpot over medium-high heat.
- Add onions, carrots, celery, garlic, and tomato paste; sauté for 5 minutes until onions are translucent.
- Sprinkle flour over the mixture and stir to coat the vegetables; sauté for an additional minute.
- Pour in seafood stock, white wine, cognac, lobster meat, smoked paprika, bay leaf, thyme, and cayenne; stir to combine.
- Cook for 30 minutes over medium-low heat, stirring occasionally.
- Remove bay leaf and thyme sprig, then stir in heavy cream and season with salt and pepper as needed.
- Puree the soup using an immersion blender or in batches in a traditional blender until smooth.
- Serve immediately.
