Instructions
- Heat butter or olive oil in a large pot over medium heat.
- Add onion, garlic, and shallot; cook until softened.
- Stir in dried thyme, salt, and pepper.
- Add potatoes, broth, and bay leaf; stir well.
- Bring to a boil, cover, reduce heat, and cook until potatoes are soft.
- Add broccoli and spinach; cook until vibrant green.
- Remove bay leaf and blend the soup until smooth.
- Return soup to pot, stir in parmesan cheese, and adjust seasoning if needed.
- Serve immediately, garnished with olive oil, bacon, and more cheese if desired.
