Ingredients

The base

  • 3 Tablespoons Butter or Olive Oil
  • 1 Medium Yellow Onion, diced
  • 2 Cloves Garlic, minced
  • 1 Large Shallot, minced
  • ½ Teaspoon Dried Thyme
  • to taste Salt & Pepper

The soup

  • 3 Cups Golden Potatoes, peeled and diced
  • 5 Cups Chicken or Vegetable Broth
  • 1 Bay Leaf
  • 4 Cups Broccoli, roughly chopped
  • 2-3 Cups Fresh Spinach
  • ¾ Cup Parmesan Cheese, freshly grated

Optional garnish

  • to taste Bacon

Instructions

  1. Heat butter or olive oil in a large pot over medium heat.
  2. Add onion, garlic, and shallot; cook until softened.
  3. Stir in dried thyme, salt, and pepper.
  4. Add potatoes, broth, and bay leaf; stir well.
  5. Bring to a boil, cover, reduce heat, and cook until potatoes are soft.
  6. Add broccoli and spinach; cook until vibrant green.
  7. Remove bay leaf and blend the soup until smooth.
  8. Return soup to pot, stir in parmesan cheese, and adjust seasoning if needed.
  9. Serve immediately, garnished with olive oil, bacon, and more cheese if desired.
