Lentil and Sweet Potato Stew

Ingredients

  • 1 Tbsp olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups green lentils, rinsed
  • 1 large sweet potato, peeled and cubed
  • 6 cups low sodium vegetable broth
  • 2 leaves bay leaves
  • ½ tsp turmeric
  • ¼ tsp cumin
  • ½ tsp black pepper
  • ½ tsp salt
  • as needed garnish fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat and sauté onion and garlic until fragrant.
  2. Add the lentils, sweet potato, vegetable broth, bay leaves, turmeric, cumin, and black pepper to the pot.
  3. Bring the mixture to a rapid boil, then reduce the heat to low and let it simmer uncovered for 20 to 30 minutes until the lentils are cooked through.
  4. Remove the pot from heat and stir in the salt.
  5. Serve topped with fresh parsley.
