Lentil and Sweet Potato Stew

Instructions
- Heat olive oil in a large pot over medium-high heat and sauté onion and garlic until fragrant.
- Add the lentils, sweet potato, vegetable broth, bay leaves, turmeric, cumin, and black pepper to the pot.
- Bring the mixture to a rapid boil, then reduce the heat to low and let it simmer uncovered for 20 to 30 minutes until the lentils are cooked through.
- Remove the pot from heat and stir in the salt.
- Serve topped with fresh parsley.
