Ingredients

The noodles

  • 8 ounces brown rice noodles (Pad Thai style)

The sauce

  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 2 tablespoons honey
  • 2 tablespoons water
  • 1 whole serrano pepper (seeded and minced)

The main ingredients

  • 1 pound shrimp (peeled, deveined, and patted dry)
  • 5 cloves garlic (minced)
  • 2 whole eggs (beaten)
  • to taste salt
  • to taste pepper
  • ¾ cup roasted peanuts (chopped)
  • 4 whole green onions (sliced)
  • 1 big handful spinach (sliced)
  • to garnish cilantro

The cooking fat

  • 2 tablespoons coconut oil

Instructions

  1. Soak the noodles in warm water for 10 minutes until pliable, then drain and set aside.
  2. Mix together the lime juice, fish sauce, honey, water, and minced pepper in a small bowl and set aside.
  3. Melt coconut oil in a large skillet or wok over high heat, then add the shrimp and stir-fry until pink, about 4 to 5 minutes.
  4. Add the minced garlic and stir for another 30 seconds, being careful not to burn it.
  5. Mix in the beaten eggs and cook until no longer runny, about 1 to 2 minutes.
  6. Stir in the soaked noodles and sauce until well combined and heated through.
  7. Season with salt and pepper, then garnish with peanuts, green onions, spinach, and cilantro before serving.
