Instructions
- Soak the noodles in warm water for 10 minutes until pliable, then drain and set aside.
- Mix together the lime juice, fish sauce, honey, water, and minced pepper in a small bowl and set aside.
- Melt coconut oil in a large skillet or wok over high heat, then add the shrimp and stir-fry until pink, about 4 to 5 minutes.
- Add the minced garlic and stir for another 30 seconds, being careful not to burn it.
- Mix in the beaten eggs and cook until no longer runny, about 1 to 2 minutes.
- Stir in the soaked noodles and sauce until well combined and heated through.
- Season with salt and pepper, then garnish with peanuts, green onions, spinach, and cilantro before serving.
