Cheesy Rigatoni Skillet with Mushrooms and Spinach

Ingredients

  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 24 oz pasta sauce
  • ¼ lb fresh spinach
  • 8 oz rigatoni
  • 8 oz whole milk ricotta
  • 2 Tbsp grated Parmesan
  • 1 cup shredded mozzarella
  • to taste Salt and Pepper

Instructions

  1. 1. Boil water in a large pot and cook the rigatoni until tender, then drain.
  2. 2. In a skillet, heat olive oil and sauté minced garlic until fragrant.
  3. 3. Add sliced mushrooms, salt, and pepper, and sauté until browned.
  4. 4. Stir in the pasta sauce and heat, scraping the skillet bottom.
  5. 5. Add spinach and cook until wilted.
  6. 6. Mix in the drained rigatoni and heat through.
  7. 7. Combine ricotta, Parmesan, and seasoning in a bowl, then dollop over the pasta.
  8. 8. Gently fold the ricotta into the pasta, leaving some pockets.
  9. 9. Top with mozzarella, cover, and heat until melted, or broil for browning.
