Instructions
- 1. Boil water in a large pot and cook the rigatoni until tender, then drain.
- 2. In a skillet, heat olive oil and sauté minced garlic until fragrant.
- 3. Add sliced mushrooms, salt, and pepper, and sauté until browned.
- 4. Stir in the pasta sauce and heat, scraping the skillet bottom.
- 5. Add spinach and cook until wilted.
- 6. Mix in the drained rigatoni and heat through.
- 7. Combine ricotta, Parmesan, and seasoning in a bowl, then dollop over the pasta.
- 8. Gently fold the ricotta into the pasta, leaving some pockets.
- 9. Top with mozzarella, cover, and heat until melted, or broil for browning.
