Curried Split Pea Soup

Ingredients

The soup base

  • 2 cups green split peas
  • 6 cups water
  • 1 small onion, chopped
  • 2 stalks celery, chopped
  • 1 small apple, chopped
  • 1 tablespoon ginger, minced
  • tablespoons yellow curry powder
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne
  • 2 teaspoons salt
  • cups vegetable broth
  • 1 can coconut milk
  • 2 cups frozen peas
  • ¼ cup lemon juice
  • 1 cup fresh cilantro

Optional additions

  • ¼ cup fresh mint
  • 2 teaspoons dried mint

Instructions

  1. Bring the split peas to a boil with the water and do not add salt. Simmer until tender.
  2. While the peas cook, chop the onion, ginger, celery, and apple.
  3. Sauté the chopped onion, ginger, celery, and apple until softened.
  4. Add the cooked split peas, curry powder, black pepper, cayenne, salt, and broth to the sautéed mixture and simmer.
  5. Add coconut milk, frozen peas, and cilantro, then blend until smooth.
  6. Adjust the seasoning with lemon juice, salt, and serve garnished with cilantro.
