Instructions
- Bring the split peas to a boil with the water and do not add salt. Simmer until tender.
- While the peas cook, chop the onion, ginger, celery, and apple.
- Sauté the chopped onion, ginger, celery, and apple until softened.
- Add the cooked split peas, curry powder, black pepper, cayenne, salt, and broth to the sautéed mixture and simmer.
- Add coconut milk, frozen peas, and cilantro, then blend until smooth.
- Adjust the seasoning with lemon juice, salt, and serve garnished with cilantro.
