Vegetable Barley Soup

Instructions
- Heat olive oil in a large saucepan over medium heat and sauté the onion.
- Add basil, oregano, thyme, pepper, salt, and bay leaves, stirring to combine.
- Add carrots, potatoes, turnip, celery, and barley, cooking for about 5 minutes while stirring regularly.
- Stir in the canned tomatoes and add water.
- Lower the heat and simmer for about an hour, stirring occasionally, until the vegetables reach the desired tenderness. Add more water if necessary.
