Vegetable Barley Soup

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, finely diced
  • 2 medium carrots, peeled and cut in large chunks
  • 3 stalks celery, thickly sliced
  • 3 medium potatoes, in large chunks
  • 1 medium turnip, in large chunks
  • 1 cup barley
  • 1 tbsp dried basil
  • tbsp dried oregano
  • 1 tbsp dried thyme
  • 1 tsp pepper
  • tsp sea salt
  • 4 leaves dried bay leaves
  • 1 can diced tomatoes
  • 8 cups water

Instructions

  1. Heat olive oil in a large saucepan over medium heat and sauté the onion.
  2. Add basil, oregano, thyme, pepper, salt, and bay leaves, stirring to combine.
  3. Add carrots, potatoes, turnip, celery, and barley, cooking for about 5 minutes while stirring regularly.
  4. Stir in the canned tomatoes and add water.
  5. Lower the heat and simmer for about an hour, stirring occasionally, until the vegetables reach the desired tenderness. Add more water if necessary.
