Instructions
- Whisk egg whites with sugar, vanilla, and salt in a heat-proof bowl.
- Set the bowl over a simmering pot of water and whisk for 5 minutes until warm and frothy.
- Fold in the coconut flakes and stir for 3 minutes until fully coated, then let sit for 20 minutes.
- Preheat the oven to 350°F.
- Make walnut-sized balls and place them on a parchment-lined baking sheet.
- Bake for 5 minutes at 350°F, then lower the temperature to 325°F and bake for an additional 14-15 minutes.
- Let cool for 10 minutes before moving.
