Ingredients

  • 4 large egg whites
  • ½ cup sugar
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 4 cups wide unsweetened coconut flakes

Instructions

  1. Whisk egg whites with sugar, vanilla, and salt in a heat-proof bowl.
  2. Set the bowl over a simmering pot of water and whisk for 5 minutes until warm and frothy.
  3. Fold in the coconut flakes and stir for 3 minutes until fully coated, then let sit for 20 minutes.
  4. Preheat the oven to 350°F.
  5. Make walnut-sized balls and place them on a parchment-lined baking sheet.
  6. Bake for 5 minutes at 350°F, then lower the temperature to 325°F and bake for an additional 14-15 minutes.
  7. Let cool for 10 minutes before moving.
