Instructions
- Cook the bacon in a large pot until almost crisp, then set aside and keep the drippings.
- Add the chopped onion and carrot to the pot and cook for about 5 minutes.
- Add the celery, garlic, bell pepper, and chiles, and cook for 2 minutes, stirring occasionally.
- Add the remaining ingredients, stir, and bring to a simmer.
- Cook for 15 minutes at a low simmer, or until the vegetables are tender.
- Stir the bacon back into the soup.
- Garnish as desired and serve.
