Aunt Vicki’s Gumbo

Ingredients

The base

  • cup butter
  • cup whole-wheat flour
  • 2 stalks celery (diced)
  • 1 small onion (diced)
  • 1 green bell pepper (diced)
  • 1 clove garlic (minced)
  • 1 10-oz can stewed tomatoes (chopped with juice)
  • 2 cups chicken broth
  • 1 cup flat beer (optional, can substitute more stock)
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • to taste pepper
  • 1 pinch thyme (dried)
  • ½ cup parsley (fresh, flat leaf, chopped)
  • ½ teaspoon cayenne pepper

The protein

  • ¾ lb shrimp (raw, peeled)
  • ½ lb lump crab meat (cooked, shredded)
  • ½ lb sausage (browned and sliced or crumbled, andouille or other variety)

For serving

  • brown rice (cooked)
  • Filé powder (optional)
  • hot sauce (optional)

Instructions

  1. Melt butter in a large soup pot over medium heat and whisk in flour until thoroughly combined.
  2. Continue whisking over medium heat until the mixture browns, about 10 to 15 minutes.
  3. Add diced vegetables, onion, and garlic to the pot, stirring and cooking until soft, about 10 minutes.
  4. Stir in the stewed tomatoes with juice, cover, and stir occasionally for 15 minutes.
  5. Add chicken broth, water, and beer, then stir in all spices and simmer uncovered for 15 minutes.
  6. Add cooked sausage and seafood, cooking on medium heat until shrimp is fully cooked.
  7. Serve over cooked brown rice and sprinkle with Filé powder and hot sauce if desired.
