Magic Crown Roast of Pork

crown roast of pork, tied and Frenched by your butcher
The seasoning

Instructions
- Pat the roast dry with paper towels and sprinkle the Magic Mushroom Powder all over the meat.
- Refrigerate the seasoned roast, lightly covered, for up to 3 days before cooking.
- Preheat the oven to 250°F with the rack in the middle position.
- Pat the pork dry again and place it on a stainless steel wire rack atop a rimmed baking sheet.
- Cook the pork for 2 to 2½ hours until the center registers 140°F.
- Remove the pork from the oven and preheat the oven to broil.
- Broil the roast for 10 to 15 minutes, rotating it to ensure even browning.
- Let the roast rest for at least 20 minutes before serving.
- Plate and garnish with curly parsley or slice into individual chops.
