Roasted Mushroom, Kale, and Goat Cheese Tacos

Ingredients

The filling

  • 16 oz sliced mushrooms
  • 1 medium red onion
  • 2 cloves garlic
  • 1 large bunch kale
  • 4 oz goat cheese

The tortillas

  • 6 Old El Paso Stand 'N Stuff Soft Flour Tortillas

The seasoning

  • 2 tablespoons olive oil
  • to taste salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Place sliced mushrooms and onion rings on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper.
  3. Roast in the oven for 25 minutes, stirring occasionally, until tender.
  4. While roasting, heat the remaining olive oil in a saucepan over medium-high heat.
  5. Add minced garlic and cook until soft, then stir in chopped kale and cook until wilted, about 5 minutes. Season with salt and pepper.
  6. Combine the roasted mushrooms, onions, and cooked kale in the tortillas.
  7. Crumble goat cheese over the top and serve immediately.
