Instructions
- Preheat the oven to 400°F.
- Place sliced mushrooms and onion rings on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper.
- Roast in the oven for 25 minutes, stirring occasionally, until tender.
- While roasting, heat the remaining olive oil in a saucepan over medium-high heat.
- Add minced garlic and cook until soft, then stir in chopped kale and cook until wilted, about 5 minutes. Season with salt and pepper.
- Combine the roasted mushrooms, onions, and cooked kale in the tortillas.
- Crumble goat cheese over the top and serve immediately.
