Instructions
- Preheat the oven to 350°F and prepare muffin tins.
- In a bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and chipotle powder.
- In another bowl, whisk together the wet ingredients: avocado oil, brown sugar, eggs, and vanilla until well mixed, then fold in the grated zucchini.
- Combine the dry ingredients with the wet mixture, adding the dried cherries and half of the chocolate chips, and gently fold to combine.
- Scoop the batter into muffin tins, filling them to the top and sprinkle with the remaining chocolate chips.
- Bake for 20-22 minutes until a toothpick comes out clean.
