Ingredients

Dry Ingredients

  • 1 ½ cups all-purpose white wheat flour
  • ½ cup raw cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 2 teaspoons cinnamon
  • ½ teaspoon chipotle powder (optional)

Wet Ingredients

  • ½ cup avocado oil or other neutral-flavored oil
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups zucchini, grated

Add-ins

  • ½ cup dried cherries, coarsely chopped
  • ¾ cup bittersweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare muffin tins.
  2. In a bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and chipotle powder.
  3. In another bowl, whisk together the wet ingredients: avocado oil, brown sugar, eggs, and vanilla until well mixed, then fold in the grated zucchini.
  4. Combine the dry ingredients with the wet mixture, adding the dried cherries and half of the chocolate chips, and gently fold to combine.
  5. Scoop the batter into muffin tins, filling them to the top and sprinkle with the remaining chocolate chips.
  6. Bake for 20-22 minutes until a toothpick comes out clean.
