Ingredients

The cups

  • 24 units wonton wrappers

The filling

  • 3 cups shredded cooked chicken
  • ½ cup enchilada sauce
  • 1 cup shredded Mexican cheese
  • 2 units green onions, thinly sliced

Optional ingredients

  • to taste chopped green chiles
  • to taste black beans
  • to taste chopped fresh cilantro
  • to taste diced avocado

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Press wonton wrappers into the cups of a mini muffin pan to form cups and bake for 7 minutes.
  3. In a mixing bowl, stir together the shredded chicken and enchilada sauce until combined.
  4. Portion the chicken mixture evenly into the baked wonton cups and sprinkle with cheese.
  5. Bake for an additional 5-7 minutes until the cheese is melted and the chicken is heated through.
  6. Garnish with sliced green onions and add any optional ingredients as desired.
