Ingredients

The cake

  • 1 3/4 cups all-purpose flour
  • 3 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 15 oz can pumpkin
  • 1 tsp vanilla extract

The cream cheese frosting

  • 8 oz cream cheese
  • 1/2 cup unsalted butter
  • 3 1/2 cups powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 13 by 9-inch baking dish.
  2. In a medium bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In a separate large bowl, blend the granulated sugar, brown sugar, vegetable oil, eggs, pumpkin, and vanilla until well combined.
  4. Combine the dry ingredients with the wet ingredients and mix until just combined.
  5. Pour the batter into the prepared baking dish and level it out.
  6. Bake for 30 to 35 minutes, or until a toothpick comes out clean. Let cool completely on a wire rack.
  7. For the frosting, whip together the cream cheese, butter, powdered sugar, and vanilla until smooth and fluffy.
  8. Spread the frosting over the cooled cake, slice, and serve.
