Instructions
- Preheat the oven to 350°F and grease the pie dish.
- Mix almond flour, baking powder, cinnamon, and salt in a large bowl.
- In a separate bowl, combine the egg, maple syrup, and coconut oil, then add to the dry ingredients and mix well.
- Press the mixture into the pie dish and pierce with a fork.
- Bake for 14-16 minutes until golden brown, then let cool completely.
- In a saucepan, heat coconut milk and maple syrup until bubbles form.
- Whisk in the cornstarch mixture and stir until thickened, then remove from heat and let cool in the fridge for at least two hours.
- Prepare coconut whipped cream by beating the coconut cream, maple syrup, and vanilla until fluffy.
- After the filling has cooled, whisk it to break up clumps and fold in half of the whipped cream.
- Slice bananas and layer them in the cooled crust, then pour the coconut mixture over the bananas.
- Refrigerate for at least two hours, then top with remaining whipped cream and chill for at least four hours or overnight.
- Serve topped with additional banana slices or chocolate shavings if desired.
