Healthy Potato Salad

Ingredients

  • 3 lbs red or yukon gold potatoes, cubed
  • 3 stalks celery, diced
  • cup finely chopped white onion
  • 4 eggs hard boiled
  • ½ cup greek yogurt
  • ½ cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • cup relish or chopped pickles
  • ¼ cup chopped fresh dill
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika

Instructions

  1. 1. Boil the potatoes in a large pot with enough water to cover them for 7-9 minutes until fork tender.
  2. 2. Drain the potatoes and let them cool for at least 30 minutes.
  3. 3. Chop the celery, onions, and hard boiled eggs into small pieces.
  4. 4. In a mixing bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, dijon mustard, and relish.
  5. 5. Add dill, salt, pepper, and paprika to the dressing mixture.
  6. 6. Combine the cooled potatoes with the chopped celery, onion, and eggs in the pot.
  7. 7. Pour the dressing over the potato mixture and toss gently to coat without smashing the potatoes.
  8. 8. Chill in the refrigerator for at least 1 hour before serving.
