Healthy Potato Salad

Instructions
- 1. Boil the potatoes in a large pot with enough water to cover them for 7-9 minutes until fork tender.
- 2. Drain the potatoes and let them cool for at least 30 minutes.
- 3. Chop the celery, onions, and hard boiled eggs into small pieces.
- 4. In a mixing bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, dijon mustard, and relish.
- 5. Add dill, salt, pepper, and paprika to the dressing mixture.
- 6. Combine the cooled potatoes with the chopped celery, onion, and eggs in the pot.
- 7. Pour the dressing over the potato mixture and toss gently to coat without smashing the potatoes.
- 8. Chill in the refrigerator for at least 1 hour before serving.
