Ingredients

Seasoning

  • 2 tsp Italian seasoning
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp sea salt
  • 2 tsp ground pepper

Pot Roast

  • 3 lbs beef pot roast
  • 1 tbsp ghee
  • 2 cups beef broth
  • 2 medium sweet potatoes
  • 1 unit onion, chopped into thick pieces
  • 6 ribs celery, chopped into thick chunks
  • 6 units carrots, chopped into thick rounds
  • 3 sprigs fresh rosemary, chopped (optional)
  • 2 sprigs fresh thyme, chopped (optional)

Instructions

  1. Mix all seasoning ingredients in a bowl and season the roast generously.
  2. Prepare the vegetables and fresh herbs as noted.
  3. Sauté the roast in ghee on all sides in the Instant Pot for 3-4 minutes per side.
  4. Cancel the sauté mode and pour in the beef broth.
  5. Layer the potatoes, onion, celery, and carrots over the roast, adding fresh herbs and any leftover seasoning.
  6. Secure the lid and set the Instant Pot to cook on high pressure for 60 minutes.
  7. After cooking, let the pressure naturally release for 10 minutes, then manually release any remaining pressure.
  8. Remove the vegetables and shred the beef in the pot, then serve with the veggies and sauce.
