Instructions
- Mix all seasoning ingredients in a bowl and season the roast generously.
- Prepare the vegetables and fresh herbs as noted.
- Sauté the roast in ghee on all sides in the Instant Pot for 3-4 minutes per side.
- Cancel the sauté mode and pour in the beef broth.
- Layer the potatoes, onion, celery, and carrots over the roast, adding fresh herbs and any leftover seasoning.
- Secure the lid and set the Instant Pot to cook on high pressure for 60 minutes.
- After cooking, let the pressure naturally release for 10 minutes, then manually release any remaining pressure.
- Remove the vegetables and shred the beef in the pot, then serve with the veggies and sauce.
