Easy Pork Sausage-Stuffed Portobello Mushrooms

Ingredients

The filling

  • 1 lb ground pork sausage
  • 1 medium onion, diced
  • 2 medium green peppers, diced
  • 2 tbsp fresh sage, finely diced

The mushrooms

  • 4-6 large Portobello mushrooms

Instructions

  1. Preheat the oven to 400°F and prepare the vegetables.
  2. Heat a skillet over medium heat, add the sausage and onion, and cook until browned.
  3. Stir in the green pepper and sage, then remove from heat.
  4. Scoop out the stems and ribs of the Portobello mushrooms and place them on a baking sheet.
  5. Fill the mushrooms with the sausage mixture.
  6. Bake the stuffed mushrooms for 15 minutes.
  7. Allow to cool slightly before serving.
