Simple Vegan Meatballs

Ingredients

For Meatballs

  • ½ cup white onion (minced)
  • 3 cloves garlic (minced)
  • 1 Tbsp flaxseed meal (to make flax egg)
  • 2 ½ Tbsp water (to make flax egg)
  • 8 ounces tempeh
  • cup vegan parmesan cheese
  • 2 tsp Italian seasonings
  • ¼ cup fresh parsley (optional)
  • ½ cup vegan bread crumbs
  • 2 Tbsp your favorite marinara or tomato sauce
  • to taste salt & pepper
  • to taste olive oil (for sautéing)

For Coating

  • cup vegan bread crumbs
  • cup vegan parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C) and prepare the flax egg.
  2. Sauté onion and garlic in olive oil until soft and translucent.
  3. In a food processor, combine tempeh, sautéed onion and garlic, and remaining ingredients to form a moldable dough.
  4. Roll the mixture into 1 Tbsp balls.
  5. Coat the balls in a mixture of bread crumbs and parmesan cheese.
  6. Brown the meatballs in a skillet with olive oil, shaking to brown all sides.
  7. Transfer browned meatballs to a baking sheet and bake for about 15 minutes.
  8. Serve on cooked pasta with marinara sauce and garnish with additional parmesan and parsley.
