Instructions
- Preheat oven to 375°F (190°C) and prepare the flax egg.
- Sauté onion and garlic in olive oil until soft and translucent.
- In a food processor, combine tempeh, sautéed onion and garlic, and remaining ingredients to form a moldable dough.
- Roll the mixture into 1 Tbsp balls.
- Coat the balls in a mixture of bread crumbs and parmesan cheese.
- Brown the meatballs in a skillet with olive oil, shaking to brown all sides.
- Transfer browned meatballs to a baking sheet and bake for about 15 minutes.
- Serve on cooked pasta with marinara sauce and garnish with additional parmesan and parsley.
