Ingredients

The fish

  • 4 filets Chilean sea bass (6-8 ounces each)

The seasoning

  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

The cooking fat

  • 3 tablespoons unsalted butter or olive oil

The aromatics

  • 1 clove garlic (minced)

The garnish

  • 1 large lemon (quartered)

Instructions

  1. Pat dry the fish filets and season one side with salt and pepper.
  2. Melt 2 tablespoons of butter in a non-stick pan over medium-high heat, then add garlic and cook until fragrant.
  3. Add the remaining tablespoon of butter and place the fish filets seasoned side down in the pan.
  4. Cook for 2-3 minutes until golden, then flip and cook for another 2 minutes until fully opaque.
  5. Remove the fish from the pan, drizzle with pan juices, and squeeze lemon over each filet before serving.
