Instructions
- Freeze the steak for 30 minutes to make it easier to slice thinly.
- Toast the spices (star anise, cardamom pods, cinnamon sticks, cloves, coriander seeds, and ground ginger) in a dutch oven without oil until fragrant.
- Add the bone broth and fish sauce, stir, bring to a boil, then simmer for 30 minutes.
- Spiralize the zucchini and divide the noodles among 4 bowls.
- Slice the steak very thinly against the grain and place it on top of the zoodles in each bowl.
- After simmering, stir in the sweetener (if using), adjust salt to taste, and strain the broth.
- Pour the hot broth over the prepared bowls to cook the steak.
- Garnish with optional toppings like Thai basil, cilantro, lime wedges, and sriracha.
