Ingredients

Pho broth

  • 4 whole Star anise
  • 2 whole Cardamom pods
  • 2 whole Cinnamon sticks
  • 2 whole Cloves
  • 1 tbsp Coriander seeds
  • 1 tsp Ground ginger
  • 8 cups Beef bone broth
  • 1 tbsp Fish sauce
  • 1 tbsp Besti Monk Fruit Allulose Blend
  • to taste none Sea salt

Pho soup

  • 12 oz Flank steak
  • 2 large Zucchini

Optional pho toppings

  • to taste none Thai basil
  • to taste none Cilantro
  • to taste none Lime Wedges
  • to taste none Red chili pepper slices
  • to taste none Scallions
  • to taste none Sriracha

Instructions

  1. Freeze the steak for 30 minutes to make it easier to slice thinly.
  2. Toast the spices (star anise, cardamom pods, cinnamon sticks, cloves, coriander seeds, and ground ginger) in a dutch oven without oil until fragrant.
  3. Add the bone broth and fish sauce, stir, bring to a boil, then simmer for 30 minutes.
  4. Spiralize the zucchini and divide the noodles among 4 bowls.
  5. Slice the steak very thinly against the grain and place it on top of the zoodles in each bowl.
  6. After simmering, stir in the sweetener (if using), adjust salt to taste, and strain the broth.
  7. Pour the hot broth over the prepared bowls to cook the steak.
  8. Garnish with optional toppings like Thai basil, cilantro, lime wedges, and sriracha.
