Ingredients

The pasta

  • 8 ounces linguine noodles
  • 1 tablespoon extra-virgin olive oil

The vegetables

  • ½ red onion
  • 1 cup cherry tomatoes

The pesto

  • ½ cup prepared pesto
  • 1 tablespoon extra-virgin olive oil

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. 1. Bring a pot of salted water to a boil and cook the pasta according to package directions.
  2. 2. While the pasta cooks, slice the red onion and cherry tomatoes.
  3. 3. Prepare the pesto in a blender if not already done.
  4. 4. Reserve ¼ cup of the pasta cooking water, then drain the pasta.
  5. 5. In a skillet, heat olive oil and sauté the red onion until softened, then add the tomatoes.
  6. 6. Once the veggies are tender, add the drained pasta, pesto, and reserved cooking water.
  7. 7. Stir until everything is hot and evenly coated, then season with salt and pepper to taste.
