Zucchini Casserole

Ingredients

  • 3 medium Zucchini (sliced in 1/4" thick slices)
  • ¾ tsp Sea salt
  • 1 ½ cup Swiss Gruyere shredded cheese blend (or any shredded sharp cheese; divided)
  • ¼ tsp Black pepper
  • 3 oz Brie cheese (edges cut off)
  • cup Heavy cream
  • 1 tbsp Unsalted butter
  • 2 cloves Garlic (minced or crushed)
  • ½ tbsp Italian seasoning

Instructions

  1. Drain the zucchini slices with salt for 45 minutes and pat dry.
  2. Preheat the oven to 400°F (204°C).
  3. Layer the zucchini in a casserole dish, alternating with shredded cheese, and season with black pepper.
  4. In a saucepan, combine brie, cream, butter, and garlic, heating until melted and smooth.
  5. Pour the cheese sauce over the zucchini and top with remaining shredded cheese and Italian seasoning.
  6. Bake for 20-25 minutes until the cheese is golden brown and the zucchini is soft.
