Instructions
- Preheat the oven to 400°F.
- Cut the spaghetti squash in half, remove seeds, and season with olive oil, salt, pepper, and garlic powder.
- Place the squash cut-side up on a baking sheet and roast for 35-40 minutes until tender.
- In a large cast-iron skillet, brown the ground beef over medium-high heat, breaking it into small crumbles.
- Push the browned beef to one side and add the diced onion and bell pepper, cooking until softened.
- Mix the softened vegetables with the beef, then add the mushrooms and garlic, cooking until the mushrooms soften.
- Stir in the diced tomatoes, tomato sauce, Italian seasoning, and additional salt and pepper to taste.
- Simmer for 15-20 minutes until the mixture thickens.
- Serve the beef mixture over the prepared spaghetti squash or your choice of base.
