Ingredients

  • ½ cup vegan butter
  • 16 ounces sliced mushrooms
  • 1 large leek
  • 2 stalks celery
  • 1 cup shredded kale
  • ½ cup fresh parsley
  • 1 teaspoon fresh sage
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh marjoram
  • 1 loaf French bread
  • 2 cups vegetable broth

Instructions

  1. 1. Preheat the oven to 400°F and prepare a baking dish with vegan butter or olive oil.
  2. 2. In a skillet, melt vegan butter and sauté mushrooms, leeks, and celery with salt and pepper until the mushrooms release their liquid.
  3. 3. Stir in kale, parsley, sage, thyme, and marjoram until fragrant.
  4. 4. Transfer the mixture to a bowl, add bread cubes and broth, and mix well.
  5. 5. Place the mixture in the baking dish, cover with foil, and bake for about 25 minutes.
  6. 6. Remove the foil and bake for an additional 15 to 20 minutes until golden brown.
