Instructions
- Bring water to a boil in a saucepan, then remove from heat and add couscous. Cover and let sit for 5 minutes.
- In a skillet, heat olive oil and cook the red pepper, cauliflower, onion, and spices over medium-high heat for 5 minutes.
- In a bowl, combine the couscous, vegetable mixture, chickpeas, olives, feta, salt, pepper, and mint.
