Ingredients

The couscous

  • 1 ¼ cups boiling water
  • 1 ½ cups couscous

The vegetables

  • 1 tbsp olive oil
  • 1 piece red pepper
  • 1 cup cauliflower
  • 1 piece onion
  • 1 tsp Moroccan spice or sumac
  • ½ cup chickpeas
  • ½ cup green olives
  • ½ cup feta cheese
  • ¼ cup chopped mint
  • to taste salt and pepper

Instructions

  1. Bring water to a boil in a saucepan, then remove from heat and add couscous. Cover and let sit for 5 minutes.
  2. In a skillet, heat olive oil and cook the red pepper, cauliflower, onion, and spices over medium-high heat for 5 minutes.
  3. In a bowl, combine the couscous, vegetable mixture, chickpeas, olives, feta, salt, pepper, and mint.
