Ingredients

  • 3 large eggs
  • 2 tablespoons coconut flour
  • a pinch none kosher salt
  • 1 tablespoon ghee or butter

Instructions

  1. Crack the eggs into a bowl and beat them together with the coconut flour and a pinch of salt.
  2. Melt ½ tablespoon of ghee or butter in a skillet over medium heat.
  3. Pour half of the batter into the skillet and cook for about 2 minutes.
  4. Flip the pancake and cook for another minute until done.
  5. Repeat with the remaining batter to make the second pancake.
  6. Serve topped with your choice of toppings, like slow cooker pork pot roast and sliced avocado.
