Instructions
- Crack the eggs into a bowl and beat them together with the coconut flour and a pinch of salt.
- Melt ½ tablespoon of ghee or butter in a skillet over medium heat.
- Pour half of the batter into the skillet and cook for about 2 minutes.
- Flip the pancake and cook for another minute until done.
- Repeat with the remaining batter to make the second pancake.
- Serve topped with your choice of toppings, like slow cooker pork pot roast and sliced avocado.
