Instructions
- Preheat the oven to 375ºF and spray a baking dish with nonstick cooking spray.
- Prepare the lasagna noodles according to the package instructions and set aside.
- Mix the whole milk ricotta, cottage cheese, sweet potato puree, and rosemary to prepare the sweet potato cheese mixture.
- In a large skillet, heat olive oil over medium heat, add the onion and sauté until translucent, then add spinach and cook until wilted.
- Stir in the marinara sauce and spices, allowing it to simmer for a few minutes.
- Layer the lasagna by placing noodles, cheese mixture, and sauce in the baking dish, finishing with a layer of noodles.
- Bake for 25 minutes, then sprinkle mozzarella cheese on top and bake for an additional 5-10 minutes.
