Ingredients

For the Sweet Potato Cheese

  • 1.5 cups whole milk ricotta
  • 1.5 cups low-fat cottage cheese
  • 1 15 oz can sweet potato puree
  • 1 tablespoon fresh rosemary, chopped

For the Sauce

  • 2 tablespoons olive oil
  • 1 large yellow onion, finely diced
  • 3 large handfuls spinach
  • 1 24 oz jar organic marinara sauce
  • 1 tablespoon dried oregano
  • 2 teaspoons garlic powder
  • pinch black pepper
  • pinch sea salt

Other

  • 12 lasagna noodles
  • ½ cup mozzarella cheese

Instructions

  1. Preheat the oven to 375ºF and spray a baking dish with nonstick cooking spray.
  2. Prepare the lasagna noodles according to the package instructions and set aside.
  3. Mix the whole milk ricotta, cottage cheese, sweet potato puree, and rosemary to prepare the sweet potato cheese mixture.
  4. In a large skillet, heat olive oil over medium heat, add the onion and sauté until translucent, then add spinach and cook until wilted.
  5. Stir in the marinara sauce and spices, allowing it to simmer for a few minutes.
  6. Layer the lasagna by placing noodles, cheese mixture, and sauce in the baking dish, finishing with a layer of noodles.
  7. Bake for 25 minutes, then sprinkle mozzarella cheese on top and bake for an additional 5-10 minutes.
