Whole Wheat Sun Dried Tomato Basil Pasta

Ingredients

The sauce

  • ½ tablespoon minced garlic
  • 1 tablespoon balsamic vinegar
  • cup olive oil
  • ¼ cup sun dried tomatoes, chopped (and drained from olive oil)
  • 3 tablespoons almond milk
  • ¼ teaspoon salt
  • teaspoon ground black pepper

The pasta

  • 8 oz whole wheat linguine
  • ½ tablespoon olive oil
  • ½ yellow onion thinly sliced
  • ½ cup fresh basil, chopped
  • ¼ cup sun dried tomatoes, chopped (and drained from olive oil)
  • to taste freshly grated parmesan cheese (optional)

Instructions

  1. Cook the linguine pasta according to the package instructions and set aside.
  2. Blend all the sauce ingredients in a blender until smooth, adding more almond milk or olive oil if needed.
  3. In a large saucepan, heat olive oil over medium-high heat and sauté the sliced onion until translucent.
  4. Add the cooked pasta and sauce to the saucepan, mixing well.
  5. Stir in the fresh basil and chopped sun dried tomatoes.
  6. Top with balsamic vinegar, black pepper, and parmesan cheese if desired, then serve.
