Ingredients

The muffins

  • 1 ½ cups gluten free flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ¾ cup grated carrots
  • ½ cup raisins (optional)
  • ½ cup maple syrup
  • ½ cup applesauce
  • 1.5 tsp vanilla extract
  • 1 ea egg (or flax egg)
  • 1 tsp melted coconut oil
  • ½ cup non dairy milk

The glaze

  • ½ cup organic powdered sugar
  • 1 tb non-dairy milk

Instructions

  1. Preheat the oven to 350°F and prepare a muffin pan with liners or coconut oil.
  2. In a medium bowl, mix the dry ingredients and set aside.
  3. In another bowl, whisk the wet ingredients together, including the grated carrots.
  4. Combine the dry ingredients with the wet ingredients and mix well.
  5. Gently fold in the raisins if using.
  6. Fill each muffin cavity with batter and bake for 20 minutes for large muffins or 18 minutes for regular size muffins.
  7. For the glaze, mix powdered sugar with non-dairy milk until smooth, adjusting consistency as desired.
