Ingredients

Dressing

  • 1 Tbsp tamarind sauce
  • 1 Tbsp low sodium soy sauce
  • 1 medium lime, juiced
  • 1 tsp Asian chili garlic sauce
  • ½ tsp fresh grated ginger
  • 1 Tbsp agave or maple syrup

Pad Thai

  • 5 medium carrots
  • 1 medium zucchini
  • ¼ cup firm tofu

Toppings

  • to taste peanut sauce
  • to taste sriracha
  • to taste crushed peanuts
  • to taste cilantro

Instructions

  1. Whisk together the dressing ingredients and adjust to taste.
  2. Add the carrots and zucchini, toss to combine, and let marinate for 5 minutes.
  3. Add the cubed tofu and toss again.
  4. Divide the mixture between two plates and top with peanut sauce, cilantro, sriracha, and crushed peanuts.
