Lemongrass Chicken

Ingredients

  • 1–2 tablespoons oil
  • 2 fat shallots
  • 6 cloves garlic
  • ¼ cup lemongrass
  • 4–5 dried Thai chilies
  • 1 lb ground chicken
  • ½ teaspoon salt
  • 1 teaspoon Chinese 5-Spice
  • 1 teaspoon cracked pepper
  • 1 bell red or yellow bell pepper
  • 2 baby bok choy
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • ¼ cup mint leaves or Thai basil
  • as needed pieces lime wedges

Instructions

  1. Prepare the rice if using.
  2. Heat oil in a skillet and stir-fry shallots until tender.
  3. Add garlic, lemongrass, and dried chilies, and stir-fry until fragrant.
  4. Remove the mixture and set aside.
  5. In the same pan, add ground chicken, season with salt and pepper, and brown it.
  6. Add five spice, bell peppers, and bok choy, and stir-fry until the vegetables are tender.
  7. Return the shallot mixture to the pan, add fish sauce, lime juice, and honey, and adjust flavors to taste.
  8. Stir in fresh herbs and serve.
