Instructions
- Prepare the rice if using.
- Heat oil in a skillet and stir-fry shallots until tender.
- Add garlic, lemongrass, and dried chilies, and stir-fry until fragrant.
- Remove the mixture and set aside.
- In the same pan, add ground chicken, season with salt and pepper, and brown it.
- Add five spice, bell peppers, and bok choy, and stir-fry until the vegetables are tender.
- Return the shallot mixture to the pan, add fish sauce, lime juice, and honey, and adjust flavors to taste.
- Stir in fresh herbs and serve.
