Spiced Chickpeas & Rice with Crispy Cabbage and Sweet Mustard Dressing

Ingredients

Spice Blend

  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons paprika
  • 1 teaspoon dried basil
  • 1 teaspoon sumac

Rice, Chickpeas & Cabbage

  • 3 tablespoons olive oil
  • 1 small head green cabbage, cored and chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup jasmine rice
  • 1 19-oz can chickpeas, drained and rinsed
  • 3 cups vegetable stock
  • cup chopped fresh parsley (optional)
  • cup toasted sliced almonds (optional)

Sweet Mustard Dressing

  • cup olive oil
  • 2 tablespoons vegan mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon yellow mustard
  • 1 tablespoon grainy mustard
  • 1 teaspoon vegan Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 clove garlic, finely minced

Instructions

  1. 1. Prepare the spice blend by mixing garlic powder, onion powder, paprika, dried basil, and sumac in a small bowl.
  2. 2. Preheat the oven to 425°F.
  3. 3. Place chopped cabbage on a baking sheet, drizzle with 2 tablespoons of olive oil, sprinkle with half of the spice blend, and season with salt and pepper. Toss to coat and roast until tender and browned, checking after 15 minutes.
  4. 4. While the cabbage roasts, heat a skillet over medium heat and add the remaining tablespoon of olive oil. Sauté onions until soft, then add garlic and the remaining spice blend.
  5. 5. Stir in the rice and chickpeas, add vegetable stock, and season with salt and pepper. Bring to a boil, then reduce heat, cover, and simmer until rice is soft and liquid is absorbed, about 25 minutes.
  6. 6. In a jar, combine all dressing ingredients and shake well.
  7. 7. Once the rice is done, stir in parsley, fluff the rice, and serve topped with crispy cabbage, toasted almonds, and a drizzle of dressing.
