Instructions
- Boil water in a medium saucepan and salt it like pasta water, then add peas and cook until bright green.
- Drain the peas and cool them under cold water for one minute.
- Blend the peas, ricotta, olive oil, and salt into a puree, leaving some texture.
- Mix in shallots, Parmesan, and lemon zest, and adjust salt to taste.
- Fill dumpling wrappers with a scant teaspoon of filling, seal with a wet finger, and set aside.
- Rub each dumpling with olive oil and arrange in a single layer in the steamer.
- Steam dumplings for about three minutes until tender and translucent, then sprinkle with salt before serving.
